Let me preface this post by saying I am not vegan. At all.
However, I was searching for a healthier, less-guilt version of brownies and came across this recipe. The original called for an egg, and I tried it that way first. Not bad. Then I did some more research and found out that a half of a banana can be substituted for an egg, so I tried it this time and YUM.
Vegan Brownies
Dry Ingredients:
3/4 cup whole wheat flour
1/2 tsp baking powder
1/4 tsp salt
Wet Ingredients:
1/2 cup unsweetened applesauce (I use a store brand for baking)
1/2 cup Hershey's baking cocoa (or other, but Hershey's has shown the best results)
1/2 cup honey (I used an expensive local kind and it came out delicious, but I bet store brand would work just as well)
1 tsp vanilla extract
1/2 medium sized banana
Directions:
Preheat oven to 350 degrees.
Stir together dry ingredients in a medium sized bowl. In a separate medium sized bowl, stir together the applesauce and unsweetened cocoa.
Mash or blend the banana really well. Add mashed banana, honey, and vanilla to applesauce and cocoa mix. Beat well.
Combine both sets of ingredients. Spray an 8x8 pan with a non-stick spray and pour mixture into the pan.
Bake for 20-30 minutes, or until cooked through the center.*
Yummy brownies with a hint of banana flavor (hey, banana and chocolate love each other, right?). Enjoy!
*Note: The first time I made this recipe, I put it in a glass pie pan (because I didn't have an 8x8 pan) and I felt like the brownies were too thin for my liking. So this time, I used a bread load pan. Meh. Ended up coming out like a brownie loaf (really thick) and took like 45 minutes to bake through. Go for the 8x8.
