Lemon Biscotti

Biscotti reminds me of being in a relaxing coffee shop, reading a good book while enjoying my favorite dark blend coffee.

But why pay $2 or $3 for a single biscotti when they're so easy (and fun!) to make? Exactly. That's why I make my own instead.

Lemon Biscotti is a great starting point when learning to make perfect biscotti. They're refreshingly easy and require few ingredients.

Tip: Once you make the batter, you will need to mold it into a gentle mound before baking. Make sure it looks like the picture below (of Lemon Biscotti, but you get the idea) and is not too high at the middle part or it will not cook evenly.



Make the recipe below and bake as instructed. Then cut into slices like this:
